Broccoli Potato Soup vg gf

Ingredients:

1 tbsp Oil or butter
4 small gold potatoes chopped
3 heads of broccoli chopped
16oz broth or half water if meat broth
1 tbsp salt
1 tbsp pepper
1 tbsp onion powder or use half onion chopped
1 tbsp garlic powder or us 3 cloves of garlic chopped
1/2 cup milk of choice

Directions:

Head large soup pan, then add oil, potatoes, garlic and onion.

When potatoes begin to soften or onions caramelize add broth, broccoli, salt, pepper. Heat to a boil then lower temp. and cover until vegetables soften. About 20 min.

When your fork can pierce the vegetables it is time to turn off the heat and blend your vegetables. If doing this in a blender, let the soup cool a bit before doing this, and don’t fill it to the top. After your veggies are all blended, stir in milk, add salt and pepper to taste, and enjoy!
