Ingredients:
1 Pumkin pie pumkin 2-4lbs.
1 Tbsp olive oil
1 Tsp salt
1 Tsp pepper
1 Tsp onion powder
1 Tsp garlic granules
Directions:
Turn oven to 350F. Line a baking tray with parchment paper. Safely cut the pumpkin in half. Using a sharp spoon scoop out the insides. To save the seeds separate them from the pumpkin and spread them onto a newspaper. Brush or use your hands to spread olive oil to coat only the inside/flesh of the pumpkin. Follow that with sprinkling the salt, pepper, onion powder, and garlic granules. Place the pumpkin skin side down on the prepared baking tray and place it in the oven for 25-30min.
This recipe is perfect for a puree, mash, or soup. I have a soup recipe coming up next using roasted pumpkin! 🙂
