Ingredients:
1 whole chicken
2 large sweet potatoes evenly cubed
2 heads of broccoli evenly cut (not too thin or it will burn)
1 1/4 tbsp salt
1 1/4 tbsp pepper
1 tbsp garlic powder
1 tbsp onion powder
1 whole lemon halved
1 tbsp olive oil
Directions:
Preheat oven to 450F Roast.
Add vegetables to pan drizzle olive oil, sprinkle 1/4 tbsp salt and 1/4 tbsp pepper, mix it all around until vegetables are completely coated.
Clean chicken, take out the insides etc. Pat dry with paper towels until dry. Drizzle lemon juice covering the chicken then put the lemons inside the cavity. Continue by sprinkling all spices covering the chicken. When finished rest it on a rack, breasts up, over the vegetables.
Put it all in the oven for 20 minutes. Keeping the food in the oven drop the temperature to 375F for another 20 minutes or until the inner chicken temperature is 165F.
Let chicken rest for 10-15 minutes before carving.
