Chicken “Lentil Noodle” Soup

Remember that chicken stock recipe from earlier in the week? Time to put it to use!

Ingredients:

2 handfuls of shredded chicken
2 carrots chopped
1 zucchini chopped
2 cups or until covered Chicken stock
2 servings of Lentil pasta

Directions:

Put all ingredients, except lentil pasta, into a sauce pan on the stove. Once it reaches boiling, turn it down to a simmer, stirring occasionally.
When carrots begin to soften, about 10-15 minutes in, stir in the lentil pasta and let it cook until it’s al dente, finished!

Pour into a bowl or cup and enjoy!
