Tofu Fajita Bowl

Ingredients:

1 portion diced tofu
1/2 cup mushrooms chopped
1/3 of a red pepper Julienne cut
1/4 cup onions Julienne cut
1 tsp salt
1 tsp pepper
1 tsp paprika
1 tsp cumin
1 tsp chili powder
1 tbsp olive oil
1/4 cup cooked brown rice

Instructions:

Heat a saute pan for about a min., add oil. *If oil starts jumping turn down heat.

Add in mushrooms, peppers, onions. Add salt, and pepper. *If vegetables are sticking add more oil.

Cook for about 7 min., or until vegetables are reduced (you can stick a fork in them effortlessly)

Add in tofu, and other spices, mix it around until spices are combined. Cook until tofu is no longer watery, or is firm to your liking.

Add in rice, combine together, and you are ready to serve. Enjoy!
